Roasted Italian Peppers [Oil-Free, Paleo, Vegan]
These roasted red peppers are super easy to make and can be used for everything from a classic Italian chopped salad, to a baguette sandwich or grilled meats and eggs! Yum!
The magic is in the smoky flavor the peppers acquire while roasting in the oven for just 15 minutes! Depending on what you're using the peppers for, season to your liking. For salads, I tend to skip the salt and oregano as the dressing usually does the work. For sandwiches or as a condiment you may want to add a bit of salt and oregano. Enjoy!
Ingredients:
2 red bell peppers
2 red bell peppers
Salt and oregano, to taste
Directions:
Set oven to broil. Half each pepper and lay out four pepper halves on lined baking sheet.
Place on top rack of oven and broil for 15 minutes, or until skin is charred with brown and black spots.
Remove from oven and let cool for 5 minutes. Once slightly cooled, remove skins and seeds with hands or fork. Chop into thin strips, season as desired and store in air-tight container or jar in refrigerator.
