Healthier Chocolate Chip Cookies [Paleo, Gluten-Free, Dairy-Free Option]
Is there anything better than fresh from the oven CHOCOLATE CHIP COOKIES?
I feel like a love for chocolate chip cookies is pretty much universal, and hey-- anything that can unite people from all different walks of life these days deserves a post in my opinion.
So, long story short, I'm basically a sugar monster and find myself craving sweets every second of every day so I wanted to put a twist on the classic chocolate chip cookie and make it a bit healthier. These are free of refined sugar, dairy, and grains and they really hit the spot during that afternoon craving.
Let me know if you test them out-- they are SO good!
Ingredients:
1 cup paleo baking flour (I used Bob's Red Mill, plain sifted almond flour should work too)
1/3 cup coconut sugar or regular sugar
4 tablespoons ghee, coconut oil, or butter (room temperature)
1 egg
1 teaspoon of vanilla
3/4 teaspoon baking soda
Pinch of salt
2/3 cup of chopped dark chocolate or chocolate chips
Makes 12 cookies.
Directions:
Preheat oven to 350 F. Line a baking sheet with parchment paper or foil.
In one bowl combine coconut sugar, ghee (or oil/butter), egg, and vanilla and mix until smooth. In separate bowl mix dry ingredients-- flour, baking soda and salt, until well incorporated. Fold dry ingredients into the wet ingredients until a smooth dough is formed. Add chocolate chips and fold in evenly.
Divide dough into 12 balls on the baking sheet, with 2 inches in between each. Bake for 12-15 minutes, until lightly golden brown. Remove from oven and let cool. Enjoy!
**Nutrition: 140 calories per cookie.
