The Ultimate Açaí Bowl [Paleo, Vegan, GF]


You guys-- this tropical açaí bowl is... BOMB!

As I do many weekends, I went a bit overboard on the heavy, salty foods last night (charcuterie and cheese anyone?) and was feeling in dire need of a clean pick-me-up for lunch today. This creation is packed with refreshing fruit, creamy almond butter and crunchy grain-free granola and all the added health benefits of the magical açaí (or so we're told).

I would suggest making this bowl as a big post-work out breakfast or a full meal rather than a snack as the calorie-count (490 calories) is pretty high, but whatever you choose it's absolutely DELICIOUS and worth every bite. Enjoy!

For one açaí bowl:

1 frozen ripe banana
1 cup frozen mixed berries
1/2 cup almond or cashew milk
2 teaspoons açaí powder

Toppings:

1/2 cup fresh mango and raspberries
2 tablespoons paleo or grain-free granola
1 tablespoon almond butter
Chia seeds, coconut flakes

Directions:
Blend together frozen fruit, almond milk and açaí powder until thick and creamy. Scoop into bowl and top with desired toppings.
