Savory Sweet Potato Crackers [Paleo, Vegan, Grain-Free]



Ingredients:
1 1/2 cups ground cashews (flour-like texture)
1/2 cup tapioca flour
1/2 cup sweet potato puree (unseasoned)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt, or to taste

Combine all dry ingredients and mix until well-incorporated, breaking up any lumps from cashew and tapioca flours. Add in pureed sweet potatoes and oil, and knead with hands until a dough is formed.

Between two pieces of parchment paper, roll out dough to a 1/8 inch thick rectangle. Slice all the way through into squares with a knife or pizza wheel into 30 to 40 crackers (I cut mine into 8 by 5 pieces). Transfer bottom piece of parchment paper with sliced dough to baking sheet.

Bake at 350 F/190 C for 18 to 20 minutes, or until just golden brown. Let cool and store in a dry, sealed container.

Serve with guacamole, hummus, cheese, or whatever your heart desires!
