Grapefruit & Fennel Salad With Shallot Vinaigrette [Whole 30, Vegan, Paleo]


Raise your hand if you think the best salads of all time never comprise of lettuce at all.

I'm beginning to think that, besides a classic Caesar salad, lettuce is just about the biggest scam of all time. Who needs those pitiful wilting leaves soaking up dressing without absorbing any flavor, or if you're like me-- rotting away in your refrigerator drawer.

This salad on the other hand is DIVINE. Crisp, citrusy, aromatic perfection for hot summer days! I'll call it fate that I happened to have fennel and grapefruit on hand and that I was feeling way too lazy for a grocery run. I decided to throw them together with a light and tangy dressing and it turned out so good. Also perfect to serve with grilled meats and seafood... mhmm!

Makes two serving but can easily double or triple for a crowd.

Ingredients:
1 large bulb of fennel, thinly sliced by hand or mandolin
1 large grapefruit, peeled and fibers removed (flesh only), torn into 1-inch pieces
1 shallot, finely chopped
2 tablespoons of olive oil
1/2 lemon, juiced
Salt and pepper, to taste.

Directions:
For dressing, combine olive oil, lemon juice, chopped shallot and a generous amount of salt and pepper. Set aside.

Toss together fennel and grapefruit. Divide between two plates, spooning half of vinaigrette over each salad. Finish off with freshly cracked salt and pepper, if desired.
