Paleo "Cookie Dough" Energy Bites [Vegan, GF]





If you told me a few years ago that I'd be blogging about a "paleo 'cookie dough' energy bite," I probably would have rolled my eyes at you, but here we are.

Guys, these little doughy bites are so good, it's nuts! They have just a few ingredients and totally fill that "I need something rich and sugary" craving.

It was my first time testing out one of these little protein balls and they turned out so well! The perfect pre- or post-workout nibble or even something great to bring to the office for those afternoon hunger pains! Don't forget the vanilla and salt-- they're the key to that authentic cookie dough feel ;)

If you aren't strictly Paleo or Whole 30 and just looking for a good, healthy snack feel free to make adjustments by using vanilla extract and agave syrup.

Recipe:
1 1/2 cups roasted cashews
1/2 cup roasted brazil nuts
2 tablespoons of roasted coconut flakes/chips
1 tablespoon melted coconut oil
Drizzle of maple syrup (sub for 1 mashed date if Whole 30)
1 vanilla pod (can sub for 1 teaspoon of vanilla extract if not Paleo/Whole 30)
1/4 cup of unsweetened cocoa nibs
Pinch of salt

Directions:
Preheat oven to 350 F. Scatter your cashews, brazil nuts and coconut chips on a baking tray and cook for 8 minutes, until slightly golden brown. Set aside to cool.

Add nut and coconut mixture to food processor (I used a blender and it miraculously worked out) and pulse until you have a fine, flour-like texture. Remove mixture into small bowl-- add coconut oil, vanilla, salt, maple syrup and pinch of salt. Combine until texture is even and you have a firm-dough like mixture. You can add more maple syrup, agave or mashed dates to reach desired sweetness.

Add in cocoa nibs and mix them to combine. With your hands, roll the dough into whatever size ball you prefer.

Store in refrigerator in airtight container, they are best after they chill for a few hours!
