I Can't Stop Eating This Vegan Strawberry Butter Smoothie Bowl
I'm no fool-- I know a good thing when I got it and this strawberry nut butter smoothie is no exception.
It's the perfect pre- or post-workout breakfast, hearty but light enough that it won't leave you feeling weighed down. The nut butter (I usually do peanut butter, but you can use any kind) gives it a creamy, salty punch. It also hardens a bit over the icy mixture and it makes it even that much better. And of course the best part-- it only has FOUR ingredients and takes about three minutes to make. I could literally eat this bowl every dang day, but it usually ends up getting thrown into rotation about twice a week. I hope you enjoy as much as I do!
For two smoothie bowls:
1 cup frozen strawberries
1 banana
1/2 cup almond milk or coconut milk
2 tablespoons of nut butter
To garnish (optional):
2 tablespoons melted nut butter
Chia seeds
Chopped almonds
Coconut bits
Fresh fruit
Blend all smoothie ingredients together until smooth and creamy. Divide between two bowls. Warm peanut butter in microwave or over medium-low heat until melted. Drizzle over bowls. Garnish with whatever you please!
