Paleo Chinese Chicken Salad [Whole 30, GF, Dairy-Free]
This salad is so refreshing, I could eat it every day! It takes a good amount of chopping, but it's worth it for the perfect lunch or dinner when you're looking for something light and refreshing, yet still full of flavor and depth! Double or triple the recipe for a crowd or for meal prep. So, so good!
Serves 2.
Salad:
1/2 small head purple cabbage, shredded
1/2 small head white cabbage, shredded
1/3 cup shredded carrots
1/3 cup thinly sliced scallions
1/3 cup finely chopped cilantro
1 cup skinless shredded rotisserie chicken (from half a chicken)
2 tablespoons salted cashews, finely chopped
Dressing:
2 tablespoons neutral oil (avocado, sunflower, or peanut if not paleo)
2 tablespoons rice vinegar
1 teaspoon sesame oil
2 teaspoons coconut aminos
1/2 lime, juiced
Salt and pepper, to taste
Combine all ingredients for salad except cashews. Toss with dressing and shredded chicken and add salt and pepper, to taste. Top with crushed cashews and a squeeze of lime. Enjoy!
