January: Top 5 Recipes We've Cooked This Month

Happy very belated New Year, y'all!
Can you believe we've almost made it through the entire first month of 2019 already? If you're anything like me, your New Year's resolutions probably included trying to eat a bit cleaner this year. Since I try to keep it pretty simple and clean in general (well at least when I'm cooking at home and not on vacation ;-)) I've decided to make a more specific goal of including more veggies and plant-based recipes into my diet.
While I feel great eating primarily Whole 30 and/or Paleo, it can be easy to default to meat-heavy recipes on a regular rotation. This year, I'm going to try to eat vegan at least one day a week to up my veggie intake and to be more ethically responsible. It's not perfect, but it's a start. Sautéed Brussels Sprouts with Pancetta is the best brussel sprout recipe! Lightly pan fried until crisp and slightly browned on the edges, it’s my favorite way to cook and eat them!

I am seriously obsessed with how these turned out and they couldn’t be easier to make. I tried a new hack to give the texture of the meatballs the ricotta effect
