December: Top 5 Recipes We've Cooked This Month

Well, so it begins! The first edition of my new series "What We've Cooked This Month." I noticed a lot of my friends repeatedly message me on Instagram for recipe links to the things I've cooked and thought this would be a good way to put the information in one easy, accessible place! 

While I love creating my own recipes, I do often turn to several of my favorite recipe developers for quick and healthy meals and for inspiration. Each month, I'll be showcasing my favorite non-original recipes I've made for the month. Quite often, I will have made each of these several times, because they turn out that dang good! 

1. Houston’s Grilled Chicken Kale Salad with Peanut Vinaigrette

Houston’s (Lightened-Up) Kale Salad with Peanut Vinaigrette is satisfying, made with a combo of grilled chicken, kale, cabbage, carrots, peanuts, scallions, cilantro and mint tossed in a light peanut-sesame dressing.

2. Lomo Saltado

For all the meat and potato lovers out there, this healthier spin on a classic Peruvian stir-fry dish combines two of my favorite cuisines – Latin and Chinese!

3. One-Skillet Crispy Chicken Thighs with Harissa

Starting the chicken skin side down in a cold skillet lets the fat render slowly and results in the crispiest skin imaginable. It also yields a pan of flavorful schmaltz, aka liquid gold.

4. Easy Vegan Pesto

The base is fresh basil, pine nuts, and garlic with a splash of lemon juice for acidity and brightness. Best served with zoodles and fresh cherry tomatoes!
