This Larb Rice Bowl Is The Perfect Thing To Eat When You Don't Know What To Eat
When you think simple, cheap and healthy the first thing that comes to mind is probably not Laotian or Thai larb, but it probably should be. Who knew that something that tastes so complex could be so effortless and SO GOOD? I found this out for the second time tonight and I'm here to encourage you all to whip this 20-minute meal together tonight rather than ordering take-out or having cauliflower rice... again (you know who you are).
I've adapted this recipe from Bon Appetit's recipe for larb lettuce wraps, but it works even better in a bowl and let's be honest lettuce is kind of overrated (don't hate me).
Ingredients:
1 pound ground chicken
2 minced garlic cloves
3-4 thinly sliced scallions
2 tablespoons soy sauce
1 teaspoon fish sauce
1 teaspoon sambal oelek
2 thinly sliced chiles
1 small thinly sliced red onion
4 tablespoons rice vinegar
Steamed white rice
Cilantro, basil and mint, chopped
Lime wedges
Start by adding your thinly sliced red onions to a bowl and add rice vinegar. Give those babies a quick stir and refrigerate while you prepare the goodness that is about to enter your mouth.
Add a splash of sunflower oil over medium heat until shimmering. Add ground chicken, garlic, scallions, soy sauce, fish sauce, sambal oelek, a few cranks of salt & pepper and chiles and gently sautéed to combine. Cook until most of liquid is reduced.
Serve larb over rice with a generous helping of quick-pickled onions, fresh herbs, more sambal oelek and lime wedges. I like to give it all a gentle stir to get all the flavors in every bite, but who am I to tell you how to eat a larb bowl?
